Here are a few files that contain some information about the theory of operation of an AOM. Of particular interest (at least at the time I made this page) is the relative efficiency of the modulation as a function of the input power. More information can be found in section 9.5.1 of Optical Waves in Crystals by A. Yariv (1984).
